Description:
Bitter gourd, or karela, is an acquired taste that many UAE households have long since acquired, prized for the sharp, distinctive bitterness that mellows beautifully once it meets oil, onions, and the right spices. Its ridged, warty skin is part of the charm, and beneath it sits a crisp, pale flesh that turns tender with cooking while holding its shape better than most gourds. The classic approach is to slice it thin, salt it, and let it sit for a while before rinsing, a step that draws out some of the sharpness without losing the character that makes karela worth cooking in the first place. From there it can be stir-fried with onions and a touch of jaggery for balance, stuffed with a spiced filling and tied with thread before shallow-frying, or thinly sliced and dried for later use, a method many households still swear by. When buying, look for firmer, smaller gourds with tighter ridges, as these tend to be less bitter and less seedy than larger, softer ones.
Store bitter gourd unwashed in the refrigerator's vegetable drawer, and use it within about a week, since the skin softens and turns yellow as it ages.
QuicKart keeps karela fresh on the shelf with free delivery across the UAE.
